Doch Mann der Tat, der er ist, vertauscht er die Reithosen mit dem Frack und steigt auf eine neue Karriere um. Sie beginnt im Wien der „verrückten Zwanzigerjahre“ und führt ihn nach Bad Gastein, Berlin, Prag und Paris. Er unterrichtet Prominenz aus vielen Ländern und vor allem die Jugend Wiens, eröffnet unzählige Bälle - unter anderem 1935 den ersten Wiener Opernball - und verliert 1945 alles. Seine Wohnung ist ausgebombt, nur durch ein Wunder ist die Tanzschule Elmayer nicht gänzlich zerstört.
Er beginnt noch einmal von vorne, lässt Rotarmisten ebenso wie GIs die Grundschritte des Wiener Walzers und der Wiener Höflichkeit lernen, wird zum Lehrer der wieder erstehenden Wiener Gesellschaft, schreibt Bücher, hält Vorträge, macht Radiosendungen, widmet sich der Häftlingsfürsorge und zahlreichen weiteren karitativen Projekten.
